Cup O Noodles

God has blessed me greatly with two wonderful sisters, one of whom, fortunately, lives in the same city as I do. Sister time is imperative in my life; without it, there is a good chance I would go insane, and I would be writing this post, not from the comfort of a cozy Starbucks, but from the padded cell of a mental institute. This particular night, my sister and I decided to do a girls-night-in and try a new, fun recipe. Feeling like “comfort food”, we opted for a healthy, and homemade, version of the soup cups you so often see in the store.

This recipe is quick, extremely easy, and delicious! All you need are four mason jars, and the following ingredients:

1/4 cup Nutritional Yeast
1 T. Sea Salt
1/2 T. Onion Powder
3/4 t. Garlic Powder
3/8 t. Thyme
1/4 t. Sage
1/2 t. Paprika
1/8 t. Turmeric
1/16 t. Ginger
2cups of Spinach
1 cup of frozen Corn
1 cup of frozen Peas
1 cup of Mushrooms and Onions (Combined)
1 box of Rice Noodles

All of the spices are used to make homemade dry bouillon. Measure the Nutritional Yeast, Sea Salt, Onion Powder, Garlic Powder, Thyme, Sage, Paprika, Turmeric, and Ginger into a bowl.

Mix, and, congratulations…you just made dry bouillon!

Next, wash the mushrooms and dice into desired size; then peel and finely chop one small onion.

Boil a pot of water, and immerse the rice noodles.

While the noodles are cooking, put the onions and mushrooms in a small frying pan, and cook desired amount.

After the noodles are sufficiently cooked, strain and rinse them under cold water to stop them from overcooking.

Next comes the fun part! Take your jars and layer them with the desired veggies; if you have picky eaters “cough, cough”, they may prefer you leave some of the vegetables out of their cups. I happen to dislike onions and mushrooms, so we left those particular ones out of my cup. First, we put in 1/2 cup of spinach, 1/4 cup of corn, 1/4 cup of peas, and 1/4 cup of the onion-mushroom mixture.

On the top, put 1 T. of the bouillon mixture.

After the water is steaming, fill up each jar and allow to steep for 3 minutes.
